Sweet and Sour Zucchini
Makes approximately 2 litres (9 cups)
|1.75 litres||zucchini, thinly sliced||7 cups|
|125 mL||honey||½ cup|
|125 mL||white wine vineger||½ cup|
|75 mL||vegetable oil||⅓ cup|
|60 mL||green bell pepper, chopped||¼ cup|
|60 mL||celery, diced||¼ cup|
|15 mL||onion, chopped||1 tbsp.|
|5 mL||salt||1 tsp.|
|5 mL||black pepper||1 tsp.|
- Combine zucchini, honey, vinegar, oil, bell pepper, celery, onion, salt and black pepper in large glass or ceramic bowl. Cover and refrigerate overnight.
- Drain and serve chilled or at room temperature.
Note: Honey is a safe and wholesome food for adults and children, but it should not be fed to infants less than a year old.
